| Eli’s Gluten Free Cookies was born on the road, specifically on I-95 between Baltimore, MD and Washington, D.C. It was on this stretch of highway that a mother and her eight year old son with celiac disease chatted about the lack of a good gluten free cookie.
When her son was diagnosed with celiac disease three years ago, Alison Waldman was overwhelmed at the prospect of managing the dietary restrictions, never mind trying to find tasty food and baked goods. After buying expensive gluten free cookies, most of which ended up in the trashcan, she finally created a gluten free version of the delicious, homemade cookies she used to bake before her son was diagnosed. It became a labor of love and a family affair,as Alison, her mother and her two sons experimented with many recipes and ultimately came up with a winner that tastes as good as the very best non-gluten free cookies. Seeing how family and friends enjoyed her cookies and receiving enthusiastic advance requests from area restaurants and grocery stores, Alison formed Virginia Sweets, LLC to commercialize her delicious creation. Virginia Sweets makes the cookie dough to strict specifications and delivers it to restaurants and stores frozen – ready to scoop, bake and serve. Virginia Sweets is committed to providing the increasing population of people with celiac disease a safe and delicious dessert, and to enabling restaurants to serve them in the safest possible environment. Virginia Sweets donates 10% of after tax profits tothe Center for Celiac Research at the University of Maryland School of Medicine, which is dedicated to improving the quality of life for patients with celiac disease, while learning the cause of the disease |
